410x290-mac_fourcheeses I liked making this, it was easy and most of the ingredients were great. I choose to cut back a bit on the cheese and I was disappointed because it then just tasted like creamy noodles.

Energy Bites

037a7a6f7c6e21179dd51d50abb2f3c3These are so amazing and so easy to make. It’s basically all of my favorite things rolled up into one.

Mix 1 cup of oatmeal, 1/2 cup ground flaxseed, 1/3 cup honey, 1/2 cup peanut butter, splash of vanilla extract, chocolate chips, and whatever else you’d like. Place in the microwave for 30 minutes. Take out and roll into bite size balls. Enjoy!

Vegetarian Quinoa Salad

5939238732_ce61481dfcThis is quick and easy too. Just cook your quinoa and prepare all the toppings. Great to have on a night when you don’t feel like cooking a big dinner.
